CHASSELAS (White)

Budding: Early (beginning of April). Sensitive to springtime frosts.

Ripeness: 1st stage. Used as a reference for other varieties.

Example: End of July: Mediterranean coast. Beginning of August: Vaucluse, Gard, Hérault and Bouches du Rhône departments. 2nd half of August: Garonne Valley.

Vigor: Medium. Short pruning recommended for quality grapes.

Production: Average (between 1 to 2 kilograms per vine-stock).

Medium cylindrical bunches of grapes. Straggly clusters.

Spherical medium-sized grapes. Light green to amber yellow. Juicy and melting. Thin but resistant skin.

Conclusion: Avoiding overproduction guarantees high gustative qualities. Chasselas used to be the French’s favorite variety, before large grapes took the stand and became increasingly popular.
